My name is Tommaso Fiore, and I manage about five hectares of olive groves spread across the countryside between the Adriatic Sea and the Murgia Barese plateau. My company was established in 2014 as a fully family-run individual enterprise. It revolves around the “dream” of producing an extra virgin olive oil of the highest quality that represents the territory and the history of the Fiore family. For this reason, the choice falls on a monocultivar Coratina, and immediately, a methodology of raw material production that is entirely sustainable is applied (the oil and the olives from which it derives have organic certification). The transformation is carried out with highly innovative mechanical methods that adhere to the highest criteria of the regulations for extra virgin olive oil.
